Italian Macaroni
2 cups tomato juice
1 cup chicken broth
2 Tblsps onion, finely chopped
1 clove garlic, minced
1 tsp italian herb seasoning
salt & pepper to taste
2 cups elbow macaroni, cooked
1 cup aged cheddar cheese, shredded
In medium saucepan, combine tomato juice, broth, onion, garlic and
seasonings. Cook, uncovered, for about 25 minutes, or until reduced to half.
Stir tomato sauce into cooked macaroni. Turn into medium size baking dish.
Sprinkle with cheese. Bake in preheated 375 F (190 C) oven for 25 minutes.
